Meal Prep: Breakfast Casserole

Grab your favorite sous chef, preheat that oven, and bake yourself a delicious breakfast meal prep packed with protein. Let's do it!

Ingredients 

  • 3/4 Pound of Ground Turkey (340g)

  • 2 Sweet Potatoes (~60g each diced) 

  • 5 Whole Eggs and 10 Egg Whites

  • 2 Red Bell Peppers (chopped) 

  • 1 Zucchini  (diced) 

  • 100g of Mushrooms (chopped) 

  • 3oz Skim Milk  

  • 140g of Cheddar Cheese


Steps

  1. Preheat Oven to 420°F

  2. Put the diced sweet potatoes on a baking sheet and bake for 15 minutes  

  3. While this is baking start cooking the turkey using any seasonings of your choice (I used minced garlic, salt, pepper, and a little Chipotle powder). Cook until all the pink is gone. 

  4. In a separate bowl beat the eggs and add a little salt and pepper (I also like to add some of the cheese in this step) 

  5. In your large baking tin or small individual tins (recommended for easy grab, heat, and go) first add the diced veggies and turkey. Then, pour the eggs in and top with your cheese

  6. Bake at 420° for 25 minutes
